The Macallan is renowned worldwide for its extraordinary single malt whiskies. Designed by internationally acclaimed architects Robert Stirk Harbour + Partners, The Macallan Distillery is located on a beautiful 485-acre Estate, and takes inspiration from the surrounding ancient Scottish hills. The building is seamlessly integrated into the hillside and respectful to the landscape.

David Thulstrup’s eye for understated, subtle elegance epitomises the quiet luxury that aligns with our own approach. The design is informal yet very special, closely connected to the art of cooking and the chefs themselves, with a beautiful open-plan kitchen. This has been an immensely satisfying collaboration.

I wanted the restaurant to feel like it has always been there, respecting the original architecture of the building. All material choices are inspired by The Macallan’s story and the surrounding landscape.

The Macallan whisky occupies the heart of the dining room, where exclusive expressions are housed in a unique oak-panelled cellar space. Surrounding this is a selection of fine wines and sherries curated by Josep Roca, award-winning sommelier of El Celler de Can Roca, set against a striking backdrop inspired by the Albariza soils of Jerez. This section reflects the importance of Jerez, where The Macallan’s exceptional oak casks are created and sherry seasoned before making their way to The Macallan Distillery to be filled with new make spirit. 

The oak dividers create comfort and a sense of focus at the table. These design elements along with the carefully chosen materials ensure the restaurant will age gracefully, creating a timeless space that will continue to evolve with the Estate
