TimeSpirit at The Macallan Estate is a dining experience in Speyside, created in collaboration with El Celler de Can Roca. Set within the existing distillery designed by Rogers Stirk Harbour and Partners, the work was shaped with respect for a building already deeply connected to its landscape, structure and material language.

The dining room is designed to sit in harmony with the architecture, not as a later addition. An open kitchen is placed at the centre of the room, bringing guests close to the preparation, rhythm and precision of service. Around it, oak, stone, glass and carefully controlled light create a setting that is calm, grounded and closely tied to the estate.

The Macallan single malt whisky is held at the heart of the experience in an oak panelled cellar, while wine and sherry are placed around it with a backdrop inspired by the Albariza soil of Jerez. The result is a room where food, whisky, landscape and architecture meet in a way that belongs naturally to the place.
